I absolutely love red cabbage although on the sweeter side made with apples, not the savoury side with garlic. So here it is:

1 whole red cabbage, thinly sliced

5 apples (red for sweet, green for not so sweet)

1 med size onion

1 tsp cinnamon

3 tablspn butter

In a large pot, melt the butter and add the onion. Only cook gently, you dont want it to go brown as you would for Burgers. Then add the sliced cabbage. Cook gently on a medium heat with the lid on. This allows the cabbage to sweat so you dont have to add any water. The cabbage produces enough ‘juice’ of its own. Stir often to prevent it sticking. If you do need to add water (or stock) just add minimal amount at a time.

You want to end up with juicy cabbage but not swimming in water as it dilutes the taste.

After about 10 mins stirring often, add the peeled and sliced apple and cinnamon.

Cook for about 30 mins until tender and soft.

Serve with Goulash, Rolladen or roast chicken.

You can add other spices as it suits your taste.
